Officially Official - We Open in March!!
Whoa. It has been a WILD ride the past couple of months, but we are excited to say that we have dates pinpointed for our official opening. We are currently working diligently on plans for our Grand Opening Bash & official actual opening date. Bear with us just a few more days, as we aren’t going to publicly announce dates quite yet (to be safe) until we complete all of our inspections, BUT we will likely be making those announcements this week. Regardless, you can rest assured knowing that we are opening come hell or high water in early March! YES! March. For real. Our MARCH MENU is below as proof, haha!
Speaking of menus, we are absolutely thrilled to announce our partnership with The Farmer’s Rail! The Farmer’s Rail is a Farm / Farmer Owned Butcher Shop located in Akron! You may also know them as Brunty Farms, you guys definitely need to check them out! Local supporting Local - its the way things are supposed to be!
So we have actual realistic dates picked, we have a solid starting menu created, new staff is being hired, everything is happening. We are so excited, and nervous… and really pretty much every single emotion all combined into one. (Glass case of emotion!) I know we’ve had a series of set backs, you’ve all been so patient with us while we navigate through this new venture & construction zone. We appreciate the overflowing amounts of love and support through all of this tremendously. Now that we’re finally at this point, we want to show you where we actually started from, our real progression pictures… We’ve done our best to be super transparent about what was going on, and what we were up to. However, we thought that putting it all together at the same time will help really put it all into perspective, and perhaps also explain why we’ve had some of the set backs that we have had. Brace yourself.

Okay guys PAUSE. Maybe take a moment or two, perhaps grab a drink for yourself before moving forward from here. I know we said that we’ve been super transparent & we definitely have been, but we’re about to show you our (almost) full truth here, an area we’ve actually been pretty quiet on until now. There are some things that we have had to deal with that will never see the public light of day out of principal. We aren’t entirely kidding here. Hello Kitchen Nightmares. Ready for this? Who am I kidding, no you’re not… no one would be, but I think we’ve done a really incredible job with this insane reno!!
There you have it (or most of it) Like I said at the beginning of this blog, it’s been a wild couple of months. We have certainly had our fair share of “what the hell are we doing!?” and “how are we even going to do this!?” moments of temporary defeat. The amount of blood, sweat and tears that has gone into all of this is very real, but you know what guys - it has all been worth it! I can’t believe we have finally hit the final moments before we actually open. Like for real. It’s finally all very real - the never ending construction story or a way less adorable and non animated version of Ratatouille has faded into the past. We have a completely ALL brand new kitchen & equipment, an adorable entry room (without wood paneling!) and we are just about ready to open our doors!
The American Legion - Post 19
We want to give a HUGE shout out to the amazing people at The American Legion at Post 19! They have been so incredibly helpful and supportive through all of this, and have happily tolerated all of our dust and reno ruckus over the past few months. We are thrilled to be gaining new Square Scullery family members. They have been busting ass right alongside with us getting this kitchen into shape - we are entirely grateful. Bryan, Chuck, Louis & Larry - you are rockstars, thank you for all that you have done to help us out and get to where we are at now. In even more fun news, the Legion is currently accepting new members - and an added bonus to all of this, we will also be offering meal discounts to all of Post 19 Members. Feel free to reach out to us and we will point you in the right direction, or contact the Legion directly. We look forward to also working closely with them in the future to help create a restaurant industry training program for Veterans, which is likely to begin next fall after food truck season ends. Don’t forget that they have a small hall available for rent too for gatherings and smaller special events!

We also have another super huge shout out to the City of Akron, we couldn’t do this without you guys and your support. Thank you all for putting up with us yapping about food trucks and incubators for 4 years ( and counting ) now. We are forever grateful. (Now let’s get this legislation finally changed & updated this year, shall we? <3 ) Thank you all for following along with our journey. Although we still have a small bit to go, we’re almost there and still able to open the Ghost before food truck season which is also a huge relief. We’ll be posting walkthrough videos and super juicy official details in the next couple days, please stay turned!
